In times gone by at Vistalba, after good vintages, a red wine was made with the grapes called Cabernet Bouchet, taken from the existing vineyard. It stood out as a powerful wine, with a strong body and superior aging potential. Now we can still find the Cabernet Sauvignon and Bouchet in this vineyard, descended from the original stocks. The Cabernet Bouchet is more commonly known as Cabernet Franc, on of the blending grapes of Bordeaux.
The characteristic blue skin oft he Cabernet Sauvignon and its black currant aroma, teamed with the finer skin and berry fragrance of the Bouchet make up this wine. Of these grapes, the one provides type, character and concentration, while the other brings finesse, round and soft sophistication. This wine matures in the French oak barrels for 24 months, then is bottled without filtering and aged yet another 12 months in bottle before release to round out the wine, enhance the balance and allow for the chocolate and tobacco aromas to come forward. The mark the Cabernet leaves on your palate memory defines the place it came from.
